Bertush’ Apricot Cake
The cake in the picture above is baked by my Mother-in-law, but if you want to make your own, here’s the family recipe by father-in-law’s aunt, Bertush. :)
Ingredients:
- 200 g. butter
- 1½ cups of sugar
- 2 cups of self-raising flour
- 4 egg yolks
- 2 whole eggs
- 2 pouches of vanilla sugar (10 g each)
- ~1 box of apricots (or plums)
Instructions:
- Mix the ingredients together, except for the apricots, which you should slice in half.
- Pour the batter into a greased cake form.
- Place apricots on top of the batter. You don’t need to press them down. Place them with the sliced side down.
- Bake in the middle of the oven for 50-60 minutes at 180 degrees C.
- When the cake cools down, sprinkle with powdered sugar.
