Bertush’ Apricot Cake
The cake in the picture above is baked by my Mother-in-law, but if you want to make your own, here’s the family recipe by father-in-law’s aunt, Bertush. :)
Ingredients:

  • 200 g. butter

  • 1½ cups of sugar

  • 2 cups of self-raising flour

  • 4 egg yolks

  • 2 whole eggs

  • 2 pouches of vanilla sugar (10 g each)

  • ~1 box of apricots (or plums)
You will also need a round cake form (about 25 cm in diameter)
Instructions:

  1. Mix the ingredients together, except for the apricots, which you should slice in half.

  2. Pour the batter into a greased cake form.

  3. Place apricots on top of the batter. You don’t need to press them down. Place them with the sliced side down.

  4. Bake in the middle of the oven for 50-60 minutes at 180 degrees C. 

  5. When the cake cools down, sprinkle with powdered sugar.
